Paris’ Michelin-starred Yoshinaga to join resident chefs to create ultra-luxury omakase menu at Banyan Tree Dubai
Banyan Tree Dubai’s award-winning Japanese restaurant TakaHisa is set to collaborate with Paris’ Michelin-starred Sushi Yoshinaga.
Helmed by sushi master Tomoyuki Yoshinaga, the 10-seat restaurant in the French capital earned its star in the Michelin guide for its “remarkably fresh fish, expertly cut and seasoned to perfection”.
Yoshinaga will join chefs Takashi Namekata and Hisao Ueda (lead picture) at their eponymous fine-dining restaurant at the five-star Banyan Tree Dubai resort, located on Bluewaters Dubai island, to serve a AED3,000 (US$817) tasting menu for four nights only.
Running from Thursday 22 August to Sunday 25 August, with two seatings per night, at 6pm and 9pm, the experience is aimed at culinary connoisseurs and will showcase Yoshinaga’s skills to a new audience with a menu that will combine highlights from all three chefs’ repertoires.

The chefs are still planning their degustations, but for an indication of what to expect, meals at Tomoyuki Yoshinaga start with fish from the Breton coast presented as whole fillets in wooden boxes. Yoshinaga’s ‘omakase’ chef’s selection menu continues with dishes such as tender squid seasoned with lime and fleur de sel and wild eel lightly infused with sake.
Chefs Taka and Hisa are famous for their premium seafood sourced from Japan's Toyosu Fish Market and high grade A5 Kobe beef served with elegant presentation and elevated drinks pairing, including premium champagnes and rare sake, selected by Senior Sommelier Ram Khadka.
