Atlantis The Royal restaurant Jaleo by José Andrés is set to launch a tasting menu curated by celebrated founding chef José Andrés himself.
José Andrés is a Spanish-American chef and restaurateur, best known for his flagship Michelin-starred Minibar restaurant in Washington, DC, as well as for his humanitarian work.
Priced at AED700 per person, the 12-course menu will pay homage to the culture of Spain and allow diners to explore a "rich tapestry of vibrant Spanish flavours".

Diners will begin with an array of appetisers, including aceitunas esféricas, liquid olives that pop in the mouth, leaving a trail of flavours, followed by a tuna tartare cone with caviar, wagyu-cured beef with avocado and tomato, fresh scallop served with escabèche dressing, tuna belly with olives and piparra dressing, empanadillas de bacalao (salt cod), a traditional chicken croquette with truffle, seasonal mushrooms with egg yolk and white truffle, and Josper-grilled turbot with garlic and olive oil.
For the main event, guests will feast on paella before ending the meal with Basque cheesecake and a decadent chocolate pie featuring a crunchy biscuit base and topped off with hazelnut praline.
